Who doesn’t love a good whiskey cocktail made for warm-weather sipping? This one gets an especially summery lift from a thyme-honey syrup and crushed ice.

1½ oz. bourbon
¾ oz. Amontillado sherry
¾ oz. thyme-honey syrup
¼ oz. fresh lemon juice
1 dash Angostura (@angosturahouse) bitters
Simple syrup (1:1) to taste
Tools: shaker, strainer
Glass: punch or coupe
Garnish: thyme sprig

Combine the ingredients in a shaker with ice and shake until chilled. Strain into a glass over crushed ice. Garnish.

Thyme-Honey Syrup
1 cup hot water
1 cup honey
5 sprigs of thyme

Steep the thyme in hot water for 15 minutes. Stir in the honey. Strain the thyme out of mixture, then store in the refrigeratorfor up to 2 weeks.
