1 French Dip, 3 Ways: Cole's

Cole’s is Los Angeles’s oldest public house. All of those pictures on the wall—that stuff’s all real. It was actually happening back in the day. This was a hub for the train station, so people would stop by and have a sandwich before leaving. One day, a guy came in here who had just gotten dental work done. He asked if someone in the kitchen could do something so that he could still eat the sandwich, so the chef dipped the bread in the jus, just to soften it up enough. From there, the french dip was born. People liked it, so they kept it on the menu.
